Ingredients:

1 1/2 cups Superberries Frozen Aroniaberries, adding a unique, tangy flavor

1 Medium Red Onion, finely chopped for a sharp bite

3 to 5 Jalapeños, depending on your heat preference, chopped finely (seeds optional for extra heat)

4 cups Roma Tomatoes, diced for a fresh, juicy base

1 can (14 oz.) Whole Kernel Corn, drained for a sweet crunch

1 can (14 oz.) Black Beans, rinsed and drained for a hearty addition

4 Limes, juiced for a citrus kick

1 tsp. Salt, or to taste

Directions:

Prep the Onion:

Place the finely chopped red onion in a small glass bowl. Sprinkle with salt and drizzle the juice of one lime over the top. Stir well and set aside to marinate, allowing the onion to mellow and absorb the flavors.

Combine Main Ingredients:

In a large mixing bowl, combine the drained corn and black beans. Wash the aroniaberries under cold water, drain, and add to the bowl. Add the finely chopped tomatoes and jalapeños to the mix. If you're feeling bold, throw in a habanero pepper with the seeds removed for an extra fiery kick.

Dress with Lime:

Squeeze the juice of the remaining three limes over the ingredients, making sure everything gets a good lime bath. This will add zest and bring all the flavors together.

Mix and Chill:

Gently fold in the marinated onions, ensuring even distribution throughout the salsa. Mix thoroughly but gently to keep the textures intact. Refrigerate the salsa for at least one hour to allow the flavors to meld beautifully.

Serve and Enjoy:

Serve this bold, colorful salsa chilled, accompanied by a generous bowl of crispy tortilla chips. It’s the perfect snack for a festive gathering or as a vibrant side dish at your next barbecue.
