Put the power of purple from Superberries Aroniaberry Concentrate in your cupcakes. We love wedding cake. But it doesn’t have to be just for weddings. Make cupcakes out of this recipe and add a tablespoon of Aronia Berry Concentrate to the batter for a little antioxidant power in every delicious bite. Add Superberries Aronia Berry concentrate to the frosting for even more power of purple.
Ingredients:
Cake
1 tablespoon of Aronaiberry Concentrate
15.25 oz box white cake mix
1 cup of flour
1 cup of sugar
¾ teaspoon salt
1 ¼ cup of water
2 tablespoons of vegetable or canola oil
1 teaspoon of vanilla
1 cup sour cream
4 egg whites
Frosting – Buttercream
4 ½ cups powdered sugar
1 ½ cups salted butter (3 sticks at room temperature)
1 ½ teaspoon vanilla extract
3 tablespoons heavy whipping cream
1 teaspoon Aroniaberry Concentrate (add more for darker color)
Cake Directions:
Preheat Oven to 325°F Place cupcake liners in cupcake pan. In a large bowl mix
together with the dry ingredients, cake mix, flour, sugar, and salt. Add the
remaining ingredients and mix for 2 minutes with a hand mixer until smooth.
Fill
cupcake liners half full. Baked at 350? for about 16-20 minutes. Test with toothpick. Place
cupcakes on a cooling rack to cool before frosting.
If
you would like white cupcakes with a swirl of purple add a drop of Superberries Aronia berry to each cupcake versus the whole bowl of batter. Swirl in with a
toothpick or knife.
Frosting Directions:
In a large bowl, cream sugar and butter on low speed with your hand mixer. Mix until well blended. Beat for another 2-3 minutes. Add vanilla, and 3 tablespoons of whipping cream and continue to beat. Add in Aroniaberry Concentrate until frosting is the desired purple color. Add more cream if needed. Mix for an additional minute. Spoon a dollop of frosting onto the cooled cupcake and frost.
Refrigerate
cupcakes until ready to serve.
