  • 5Roma Tomatoes (Cut in chunks)
  • 1 cupPeaches (Fresh or canned - Cut into chunks
  • 1White Onion (Cut into chunks)
  • 1Jalepeno Pepper (Cut into chunks)
  • 2Garlic Cloves
  • 1Juice of one Lemon
  • 1Bunch of Cilantro Leaves
  • PinchSalt and Pepper to Taste
  • 3Mangos (Skinned and sliced)
  • 4                               Roma Tomatoes Chopped
  • 3 tablespoonsTomato Paste
  • 4 tablespoonsBrown Sugar
  • 4 tablespoonsRed Wine Vinegar
  • 1Jalepeno (Chopped finely)
  • 2Garlic Cloves (Chopped finely)
  • 2 cupsFreshly Frozen Aroniaberries
  • PinchSalt and Pepper to Taste

Take the first seven ingredients (Roma Tomatoes, White Onion, Jalepeno, Garlic Cloves, Lemon Juice, Cilantro, Salt & Pepper), put everything into a food processor and pulse until chopped (About 4-5 pulses) DO NOT PUREE. Set Aside. Mix all the ingredients and fold in the salsa ingredients until blended. Chill at least two hourse before serving. (Overnight preferred). Serve with assorted tortilla chips.
