Aronia Apple Crisp

We’ve put our berry wonderful spin on this classic dessert.  It’s easy to make and is a great dessert to go with dinner any day of the week.  Plus the aroniaberries add extra antioxidants to your diet.

Ingredients:

1 cup Superberries Fresh Frozen Aroniaberries
6 cups apples (e.g., Granny Smith or baking apples), peeled and thinly sliced
1/4 cup butter, diced into small cubes
2 tablespoons granulated sugar
2 teaspoons cornstarch
1 teaspoon freshly grated orange zest
3 teaspoons freshly squeezed orange juice

For the Crisp Topping:

1/2 cup all-purpose flour
1/2 cup quick-cooking oats
1/4 cup packed brown sugar
1/4 cup chopped pecans or almonds (for added crunch)
1/4 teaspoon ground cinnamon
Pinch of salt
1/4 cup shredded coconut (for a tropical twist)

Directions:

Preheat and Prepare: Preheat your oven to 375°F (190°C). Grease an 8-inch square baking dish with butter or cooking spray.

Prepare the Filling: In a large mixing bowl, combine the sliced apples and Aroniaberries. Add granulated sugar, cornstarch, orange zest, and orange juice. Gently toss until the fruit is evenly coated. Transfer the mixture to the prepared baking dish, spreading it out into an even layer.

Make the Crisp Topping: In another bowl, combine the flour, oats, brown sugar, chopped nuts, cinnamon, salt, and shredded coconut. Add the diced butter cubes. Using your fingers or a pastry blender, mix the ingredients until the mixture resembles coarse crumbs.

Assemble and Bake: Sprinkle the crisp topping evenly over the fruit mixture in the baking dish, covering it completely. Bake in the preheated oven for 50 to 60 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.

Serve and Enjoy: Allow the berrylicious apple crisp to cool slightly before serving. For an extra indulgent touch, serve warm with a scoop of vanilla ice cream or a dollop of whipped cream on top. Garnish with additional fresh berries or orange zest for a pop of color and flavor.
