This Aronia Black Bean Chili Recipe combines the ingredients of traditional chili with the Aronia berry for a "berry" robust meal. Make in the slow cooker for a simple weekday meal. The Aronia berries add a wonderful texture and powerful antioxidants to the chili.
Aronia Black Bean Chili
1 Cup Superberries Freshly
Frozen AroniaBerries
2 Cups Chicken Broth (or vegetarian broth)
1 Tablespoon Olive Oil
1 Cup Chopped Onion
1 Tablespoon Fresh Chopped Garlic
2 Teaspoons finely Chopped Jalapeno
2 Cups Ground Turkey (substitute vegetarian meat replacement - Dominex
Eggplant Meatballs)
1 Chopped Pepper
4 Teaspoons Chili Powder
1 1/2 Teaspoons Ground Cumin
1 Teaspoon Ground Coriander
1 Teaspoon Dried Mustard
1/2 Teaspoon Dried Oregano
4 Cups Tomatoes
1 Can (16 ounces) Black Beans
1/4 Cup Chopped Cilantro
Heat one cup of broth and pour
over the Aronia Berries in a small pan. In a large saucepan, sauté onion
in olive oil. Add garlic and jalapeno. Add turkey or crumbled Dominex
Meatballs, seasonings, tomatoes, and remaining broth. Bring to a boil and
reduce heat; simmer uncovered 5 minutes. Stir in black beans, Aronia berries,
and cilantro. Simmer. Garnish with tortillas, sour cream and cheese.
