Slice your loaf of bread into slices (about 1/2 inch thick). Peel and cut your garlic clove in half. Rub the clove onto the slices of bread and toast until golden brown (broiler, panini maker or skillet). Dice and seed your tomatoes, slice the fresh basil. In medium bowl, combine ingredients, mix and place on toasted bread. Spoon evenly over toasted bread slices. Serve immediately. TIP: You can also substitute the shrimp for shredded turkey, chicken or any meat of your choice. You could also use this as filling for a pita pocket.
