Ingredients:
½ cup White Vinegar
¾ cup Honey
2 teaspoons Minced Garlic
1 teaspoon Lime Zest
½ teaspoon Salt
1 Jalapeno, finely diced
2 tablespoons Lime Juice
For the Relish:
1 cup Frozen Aroniaberries
1 cup Strawberries, diced
1 cup Cucumbers, diced
3 tablespoons Onions, finely chopped
2 tablespoons Fresh Cilantro, chopped
Instructions:
In a small saucepan, combine white vinegar, honey, minced garlic, lime zest, and salt. Bring to a gentle boil over medium heat, stirring occasionally until the mixture is smooth and well combined.
Once boiling, add the diced jalapeno and lime juice to the saucepan. Simmer for 2-3 minutes, then remove from heat and let it cool to room temperature.
In a mixing bowl, combine the frozen Aroniaberries, diced strawberries, cucumbers, onions, and cilantro.
Pour the cooled sauce over the relish ingredients in the bowl.
Gently toss the ingredients until they are evenly coated with the sauce.
Allow the relish to sit for about 15 minutes to meld flavors before serving.
