Superberries Irish Barmbrack Cake

Celebrate St. Patrick’s Day with Superberries take on this Barmbrack cake.  This dessert is an Irish tradition usually made on holidays. After pouring the batter into a bundt pan, you can add items in the cake which symbolize certain things for the person who receives each in their slice. Some objects that the Irish traditionally added were, a coin to symbolize good fortune, a ring for marriage, etc.  At Superberries we added Frozen Aroniaberries for good health and wellness.

Ingredients:

½ cup of thawed Frozen Aroniaberries

2 cups of dried mixed fruit

1 cup hot tea

1 teaspoon of cinnamon

½ teaspoon of nutmeg

½ teaspoon of baking soda

1 egg

1 ½ cup lemon marmalade

1 teaspoon of orange zest

Directions:

Soak the fruit in the hot tea for 2 hours, drain the excess tea.  Preheat oven to 350 degrees F.  Grease a Bundt pan.  Stir together the flour, cinnamon, nutmeg, and baking soda; set aside.

Beat the egg, sugar, marmalade, orange zest, and tea-soaked fruit until well combined.  Fold in the flour, then pour into the prepared Bundt pan.  Dab excess juice off the Aronia berries. Stir the berries into the batter.  Evenly distribute the Aroniaberries throughout the batter to ensure each slice contains berries for good health.  Bake for 1 hour. Cool before serving.  Glaze if you so desire.
